Cassava is a potential agricultural commodity for agro-industrial development, particularly in Kampung Calengka, Bumiwangi Village, Ciparay District. This study aims to: (1) Identify the processing stages of cassava into tapioca flour, (2) Calculate the added value generated, and (3) Determine the profit of the home industry. A descriptive quantitative method was used, along with the Hayami Method to analyze added value. The processing stages include peeling and washing, grating, pressing (extraction), settling, and drying. The results show that processing 1 kg of cassava yields an added value of Rp88,467,665.4, with an added value ratio of 1 percent. The average monthly income or profit of the cassava processing entrepreneurs is Rp154,008,559.07. For one day of production, the total cost incurred is Rp10,154,660.3, while the total revenue reaches Rp164,163,220.00. This business is highly profitable, with an R/C ratio of 16.17, indicating that every Rp1 spent results in Rp16.17 of revenue. These findings suggest that the tapioca flour agro-industry has strong economic potential and is worth further development.
